The best GF flour we've tested

Finding a gluten-free flour that actually works as a 1:1 substitute for wheat flour is genuinely hard. Most require you to adjust your recipe, add extra binders, or accept a noticeably different texture. King Arthur Measure for Measure is the exception.

We've tested it in muffins, cookies, pancakes, and quick breads — and in every case, the results were nearly identical to the wheat flour version. The texture is right, the rise is right, and there's no gritty aftertaste that plagues so many GF flours. It just works.

The secret is that it already contains xanthan gum, which is the binder that holds GF baked goods together. Many GF flours leave this out and expect you to add it separately. King Arthur builds it in, which means you truly can swap it cup-for-cup with no formula changes.

Glutee Verdict

If you're only going to keep one GF flour in your pantry, make it this one. It's the most reliable substitute we've found — and it's the flour behind every recipe in Sarah's GF Kitchen. The price is higher than regular flour but the results are worth it.
